CHAMPAGNE SABAYON

Serves: 4

 

Ingredients

3 egg yolks

1/2 cup sparkling wine

1/4 cup sugar

2.5 cups mixed berries - strawberries, raspberries, blueberries and grapes chopped.

 

Method:

Double boiler with a bowl that can fit over a pot with simmering water

Before you put the bowl over the hear add egg yolks and sugar and whisk together

Then add the wine and whisk

Then put bowl over pot and allow the steam to heat the bowl. Keep whisking, sabayon should be moving at all times, keep stirring over heat until the sabayon coats the back of a wooden spoon then remove from heat.

In small bowls or a serving class place the mixed berries and then spoon over a generous portion of sabayon.
