BENS SALMON PARCELS


PREP TIME 10 minutes
COOK TIME 15 minutes
SERVES 2

MEDITERRANEAN STYLE

INGREDIENTS

2 Fillets salmon

½ Fennel thinly sliced

8 pieces thin Broccolini

½ red onion sliced thinly

½ small zucchini thinly sliced

2 cheeks capsicum thinly sliced length ways

Dash of olive oil

Juice of 1 Lemon

METHOD

Step 1

For each salmon parcel, prepare a sheet of foil and a sheet of baking paper. Drizzle a little olive oil on the baking paper, then place the salmon fillet on top. Season with salt, and add half of the vegetables to each parcel. Drizzle more olive oil over the vegetables, squeeze half of the lemon juice over each parcel, and sprinkle a bit more salt on top.

Place another sheet of baking paper and foil over the top, then fold and seal the edges tightly to form the parcel.

Step 2

Place the parcels in a pan over medium heat and cook for 15 minutes.

Step 3

To serve, either open the parcels and enjoy directly (no extra washing up required!) or transfer the contents to a plate.

FRENCH STYLE

INGREDIENTS

2 Fillets of salmon 

4 Button Mushrooms thinly sliced

10 Sun dried tomatoes cut up

10 olives sliced up 

Small handful of Sage

Small handful of Basil

Splash of cream

Dash of olive oil

METHOD

Step 1

For each parcel, lay out a sheet of foil and a sheet of baking paper. Drizzle a little olive oil onto the baking paper, then place the salmon fillet on top. Season the salmon with salt, and add half of the vegetables to each parcel. Pour a bit of cream over the salmon and vegetables, and sprinkle a pinch of salt on top.

Cover with another sheet of baking paper and foil, then tightly seal the edges to create the parcel.

Step 2

Place the parcels in a pan over medium heat and cook for 15 minutes.

Step 3

To serve, you can open the parcels and enjoy straight from the bag (no extra dishes!), or transfer the contents to a plate.
