HONEY POACHED STONE-FRUITS


PREP TIME 15 minutes
COOK TIME 5 minutes
SERVES 2

INGREDIENTS

1 Firm white peach

1 Firm yellow peach

2 Firm black plums

1 Firm red plum

Handful of blackberries cut in half

1 Lemon

4 Choc mint TimTams chopped up

4 tbsp double cream

2 tsp balsamic glaze

Drizzle of olive oil

½ cup of honey

METHOD

Step 1

Cut the stone fruits into bite-sized pieces. Heat a pan over high heat and drizzle a little olive oil once the pan is hot.

Step 2

Add the stone fruits to the pan and cook until they darken in color. Reduce the heat to medium, then pour in the honey, stirring to coat the fruit evenly. Squeeze the lemon juice over the fruit, allowing the sauce to reduce as the fruit finishes cooking. Once cooked, remove the pan from the heat and stir in half of the blackberries.

Step 3

To serve, divide the cream between two bowls. Spoon the cooked fruit on top, drizzle with balsamic vinegar, and garnish with the remaining blackberries and crumbled TimTams.
