BLONDE BOLOGNESE


PREP TIME: 15 minutes

COOK TIME: 30 minutes

SERVES: 2

 

INGREDIENTS

120 g Barilla linguine

1 stick celery, diced

1 carrot, diced

1 onion, diced

2 garlic cloves, finely sliced

6 rashes streaky bacon, diced

500 g chicken mince

500 ml passata

Pinch of salt

4 sprigs of thyme (use the leaves only)

1 cup of chicken stock

1 tablespoon of grated parmesan

 

METHOD

Heat olive oil in a frypan

Add diced vegetables and bacon

Cook until vegetables and translucent

Add the chicken mince and cook until the bacon is crispy and chicken has started to brown

Add the passata, salt and thyme leaves

Simmer for 20 minutes, adding a little chicken stock every 5 minutes

10 minutes before the bolognese is ready, cook the linguine in a saucepan of boiling water

Strain the linguine and place on a serving dish

Add the Bolognese and top with grated parmesan to serve
