CHARGRILLED CHICKEN WITH GUACAMOLE


PREP TIME: 30 minutes

COOK TIME: 20 minutes

SERVES: 2

 

INGREDIENTS

1 packet Old El Paso Tortillas

CHICKEN

1 chicken breast with skin on

1/2 packet Old El Paso Fajita mix 

Olive oil

Salt

GUACAMOLE

2 avocados 

6 cherry tomatoes

Juice 1/2 lime

1 packet of Old El Paso Original Spice Mix for Guacamole

 

METHOD

Step 1

Coat chicken breast with Fajita mix

Add a dash of olive oil to make a wet spice rub

Turn chicken to ensure it is well coated with spice

Allow to sit for 30 minutes

Step 2

Cut tortillas into triangles

Place on a pizza tray

Bake in the oven at 180 deg for approx 30 mins

Step 3

Dice the avocados and tomatoes 

Add lime juice

Mix in the guacamole spice mix

Add a pinch of salt

Step 4

Note: if you don’t have a charcoal grill use a griddle pan

Heat char grill or griddle pan

Cook chicken breast on the griddle for 6 minutes

Remove chicken from heat and rest for 12 minutes, then dice and add a pinch of salt

Step 5

Add diced chicken to the guacamole and mix through

Place in a serving dish and garnish with fresh coriander 

Serve with the crisp tortilla triangles to scoop the delicious guacamole
