CHAI ROASTED PEARS & ICE CREAM

SERVES 4

INGREDIENTS

4 large (850g total) Packham pears

Juice of ½ lemon

1 cup (250ml) strongly brewed chai tea

1 cup (115g) runny honey

1 tsp cornflour

2 cinnamon sticks

2 whole star anise

Vanilla Ice cream, to serve

METHOD

Step 1 

Pour milk chai into a saucepan over medium-high heat, along with honey, a star anise, cinnamon, and flour. While the mixture is cooking, prepare the pears by leaving the skin on and cutting them into chunks about an inch in size.

Step 2

Evenly distribute the pear chunks among serving dishes and squeeze a little lemon juice over each. Once the chai mixture comes to a boil, reduce the heat and let it simmer for about 5 minutes.

Step 3

Pour the chai mixture over the pears, ensuring they’re fully covered. Place the dishes in the oven at 180°C and bake for about 30 minutes. Serve in a bowl or straight from the dish, with cream and/or ice cream. Optional: finish with grated chocolate on top.
