CHILLI SCALLOPS & WHITE WINE SPAGHETTI

INGREDIENTS
400g spaghetti
80g salted butter
1/3 cup (80ml) extra virgin olive oil
2 garlic cloves, crushed
2 long red chillies (or to taste), seeds removed, finely chopped
500g scallops
1/3 cup (80ml) white wine
3/4 cup flat-leaf parsley leaves, finely chopped
Grated zest of 1 lemon and juice of 1/2 lemon
METHOD
Step 1
In a medium pot, boil water. Pinch of salt into water. Take a hand full of scallops and slice up into a mince. Pour olive oil and place butter into pan, place pasta into boiling water. Add another pinch of salt’’
Step 2
Slice up chilli, slice garlic thinly and cook for 2 - 3 minutes then add white wine. After that add scallop mince for another 2 - 3 minutes. Add a squeeze of lemon and cream. One combined into a sauce, stir in parsley.
Step 3
Add pasta into sauce, and serve up.
