CHARRED COS WITH ANCHOVY AND MACADAMIA


PREP TIME: 10 minutes

COOK TIME: 45 minutes

SERVES: 2


INGREDIENTS

1 cos lettuce

4 macadamias


TOMATO INFUSED OIL

Punnet cherry tomatoes

⅓ cup olive oil

Pinch salt


ANCHOVY CREAM

3 anchovies, minced (chop finely and continue to chop until minced)

Zest of 1 lemon

Small pinch of salt

½ cup crème fresh


METHOD

Step 1

Heat oven to 180 degrees Celsius


Step 2

Place tomatoes in a pie dish 

Pour the olive oil over the tomatoes and sprinkle with salt

Bake for 45 minutes to infuse the oil with tomato flavour


Step 3

Add the anchovy cream ingredients to a bowl and mix together


Step 4

Heat a griddle pan until hot

Cut the cos in half lengthways and sprinkle the cut sides with olive oil

Place the cos, cut sides down, into the hot pan and cook until charred


Step 5

Remove the cos from the heat 

Sprinkle tomato infused oil over the cut sides of the cos

Grate the macadamias over the top


Step 6

Place a tablespoon of anchovy cream onto a serving plate

Put the prepared charred cos on top of the anchovy cream to serve
