SALMON FAJITAS


PREP TIME: 20 minutes

COOK TIME: 5 minutes

SERVES: 2

INGREDIENTS

150 g Huon Wood Roasted Salmon

1 6-pack Old El Paso Mexican Wholegrain Tortillas 

¾ cup sour cream


FAJITA MIX

1 red capsicum, sliced

1 yellow capsicum, sliced

1 green capsicum, sliced

1 onion, sliced

1 tablespoon cumin

1 tablespoon smoked paprika 

½  teaspoon cinnamon 

1 tablespoon dried oregano 

1 garlic clove, finely sliced

Juice of 3 limes

1 block palm sugar, grated

Pinch of salt 

¼ cup olive oil


METHOD

Step 1

Place fajita ingredients in a bowl, stir to mix then allow to sit for 30 minutes 


Step 2

Sauté the fajita mix for 5 minutes in a hot frypan


Step 3

Remove the skin and then break the salmon into pieces

Add the salmon pieces to the fajita mix and gently stir. Turn off the heat and leave for until the salmon has warmed through


Step 4

Serve fajita and salmon mix in a bowl alongside warmed whole grain tortillas and sour cream
