MACADAMIA DUKKAH AND AVOCADO ON TOAST


PREP TIME: 10 minutes

COOK TIME: 10 minutes

SERVES: 2


INGREDIENTS


DUKKAH

½ cup macadamias

¼ cup pepitas

¼ cup sesame seeds

2 tablespoons cumin seeds

2 tablespoons fennel seeds

1 tablespoons ground coriander

1 teaspoon paprika

Pinch of salt


TO SERVE

2 thick slices sourdough

1 avocado

1 tablespoon fresh parsley, chopped

Olive oil


METHOD

Step 1

Add the pepitas and macadamias into a frypan and cook until the pepitas pop and the macadamias begin to colour

Remove from the frypan and allow to cool for 5 minutes

Give a short burst in the food processor to break up the macadamias


Step 2

Add the remaining dukkah ingredients to the frypan and toast until fragrant

Return the macadamias and pepitas to the pan and mix through the spices

Allow to cool

Add the dukkah to the food processor and give short bursts until the dukkah is broken up evenly


Step 3

Sprinkle olive oil over the sourdough slices

Toast in a griddle pan


Step 4

Cut the avocado into quarters


Step 5

Place the sourdough toast on a serving plate

Arrange avocado quarters on top

Sprinkle with dukkah and olive oil

Garnish with fresh parsley to serve
