PEACHES AND CREAM ON BRIOCHE


PREP TIME: 15 minutes

COOK TIME: 35 minutes

SERVES: 2


INGREDIENTS

BRIOCHE

2 thick slices of brioche

2 knobs of butter


PEACHES

2 white peaches

1 knob of butter

1 tablespoon muscovado sugar

1 tablespoon white sugar

6 mint leaves, finely sliced


METHOD

Step 1

Heat oven to 180 degrees Celsius

Step 2

Melt 1 knob of butter in an ovenproof pan

Cut the brioche slices into 1 cm cubes

Add the brioche cubes to the pan and stir to coat with butter

Add another knob of butter to the pan and bake in the oven for 25 minutes until the brioche is golden

Remove from the oven and cool 

Step 3

Cut the peaches in half and remove the stones

Cut each peach half into 4 pieces and place into a pie dish

Sprinkle the muscovado and white sugar over the peaches and add a knob of butter

Bake in the oven for 35 minutes

Remove from the oven and cool for 10 to 15 minutes


Step 4

Spoon peaches on a serving plate, add a tablespoon of yoghurt and sprinkle brioche cubes over the top. Garnish with mint to serve
