WARMED HUMMUS AND SPICED LAMB ON TOAST


PREP TIME: 20 minutes

COOK TIME: 30 minutes

SERVES: 2


INGREDIENTS


HUMMUS

1 can chickpeas, 400 g

Juice of 1 lemon

1 garlic clove, chopped

½ cup tahini

1 teaspoon cumin

¼ cup olive oil

Pinch of salt


SPICED LAMB

¼ cup pine nuts

 500 g minced lamb

1 teaspoon cumin

½ teaspoon allspice

½ teaspoon cinnamon

1 tablespoon chilli flakes

Juice of ½ lemon

Pinch of salt


Slices of sourdough bread or toast

METHOD

Step 1

Place all hummus ingredients into a food processor and blitz until smooth

Step 2

Toast the pine nuts in a frypan until golden

Put the toasted pine nuts into a bowl

Step 3

Add the lamb mince to the frypan and cook until browned

Add the cumin, allspice, cinnamon and chilli and cook until the lamb begins to crisp up

Add the lemon juice and salt

Stir through the parsley and pine nuts

Step 4

Place a large spoonful of hummus onto a serving place, cover with lamb and drizzle with olive oil

Serve with pieces of sourdough to scoop up the spicy lamb and hummus
