CHICKEN BOLOGNESE

INGREDIENTS

500g chicken mince

400g spaghetti

1 jar Pukara garlic, chilli, and tomato pasta sauce (or any sauce of your choice)

1 onion, finely diced

3 cloves garlic, crushed

1/2 tsp dried garlic

1 tbsp olive oil

1 cup dry white wine

1 1/2 tsp fresh tarragon, chopped

1 1/2 tsp fresh oregano, chopped

Parmesan cheese, to serve

METHOD

Step 1 

In a large pot of salted boiling water, cook the spaghetti until al dente, then set aside.

Step 2

Meanwhile, in a large frying pan, heat the olive oil over medium heat. Sauté the diced onion and crushed garlic until they’re lightly golden. Add the chicken mince, cooking until it browns, then pour in the white wine to deglaze, allowing it to reduce until the alcohol cooks off. Stir in the pasta sauce and dried garlic, simmering to blend the flavours.

Step 3

Add the cooked pasta directly to the sauce, along with a splash of pasta water to bind. Toss everything together until evenly coated. To serve, divide among bowls and top generously with fresh parmesan shavings.
