TRUFFLED MUSHROOMS ON TOAST

INGREDIENTS

150g mixed mushrooms, roughly chopped

50g Swiss brown mushrooms, roughly chopped

50g button mushrooms, roughly chopped

Sourdough toast, to serve

30g truffled butter (optional)

2 tsp truffled mushroom paste (optional)

1/2 cup crème fraîche

1 tsp chopped thyme

1 tsp chopped chives

Fresh parsley, for garnish

METHOD

Step 1 

Start with a cold pan; add the Swiss brown and button mushrooms with a pinch of salt. Slowly bring the heat up to medium-high, allowing the mushrooms to release and cook off excess moisture. Once they’re nicely softened, toss in the remaining mushrooms, truffled butter, and mushroom paste (if using). Sauté for 3-5 minutes until everything melds together. Add the crème fraîche, stirring to create a creamy, sauce-like consistency, then fold in the thyme and chives.

Step 2

To serve, place slices of sourdough toast on each plate, generously spoon the creamy truffled mushrooms over the top, and finish with a sprinkle of fresh parsley.
