SIMPLE CHICKEN SATAY

INGREDIENTS
1 kg chicken thighs, cubed
1 tsp cumin seeds, toasted and ground
2 tsp coriander seeds, toasted and ground
1/2 tsp black peppercorns, toasted and ground
1 tsp cayenne pepper
100g peanut butter
2 red onions, diced
3 tomatoes, diced
3 sprigs thyme, roughly chopped
2 long red chillies, thinly sliced
2 cups Massel chicken stock
2 pouches Tilda instant pure basmati rice
METHOD
Step 1
In a large, hot pan, brown the chicken until golden. Add the ground cumin, coriander, peppercorns, and cayenne pepper, stirring to coat the chicken well. Toss in the diced onions, tomatoes, and chillies, cooking until softened. Stir in the peanut butter, mixing well until everything is coated and creamy. Pour in the chicken stock, bringing it to a simmer and allowing it to reduce until the sauce is rich and thick.
Step 2
Steam the basmati rice and divide between plates. Spoon the satay chicken over the rice, and garnish with fresh sprigs of coriander for a fragrant finish.
