CRAYFISH SALAD

Cook time: 5 minutes
Serves: 2
Ingredients
200g Crayfish meat chopped
1 long red chilli deseeded and diced finely
1/2cm finely grated ginger
1 clove crushed garlic
1cm finely grated lemongrass
5 cherry tomatoes
1 cob of corn
Juice of half lime
1 tablespoon of fish sauce
1 tsp grated palm sugar
2 tbs olive oil
Small bunch of coriander
Method
Grill corn on a BBQ, in a griddle pan or over a gas hob.
Cut the kernels from the cob.
Mix all ingredients together in a bowl and serve.
