PEACH AND GIN SORBET

Ingredients

500g canned peaches

1/2 cup syrup from peach can

50ml gin

Juice 1/2 lemon

tsp vanilla extract

Pinch salt

 

Method

Blend sorbet ingredients together in a food processor.

Pour into a small tray and put in freezer until it sets (at least 3-4 hours).

When frozen turn frozen sorbet out onto a cutting board and cut into large chunks and return to food processor and blend into a sorbet. Important to move quickly so it doesn't melt. 

When blitzed into a sorbet return to the tray and back in the freezer until you are ready to serve.
