MISO MUSHROOMS

Ingredients
2 cloves garlic finely diced
2 tablespoons soy sauce
1 tablespoon honey
2 tablespoons miso paste
1/2 teaspoon sesame oil
1 cup enoki mushrooms roughly chopped
1 cup swiss brown mushrooms roughly chopped
1 cup oyster mushrooms torn into large chunks
25 grams butter chopped into cubes
1 avocado diced
Juice of one lime
Salt and pepper to taste
4 x slices sourdough bread
2 tablespoons olive oil
Method
Pre-heat oven to 180 degrees Celsius.
Mix together soy sauce, garlic, honey, miso, sesame oil in a small bowl.
Tear a large square of aluminum foil and place a square of baking paper the same size on top. Lay out the mushrooms on the baking paper, pour over the marinade and top with the cubes of butter. Wrap the mushrooms into a parcel with the baking paper and aluminum foil and place in the oven for 20 minutes.
Drizzle sourdough bread slices with olive oil and toast on a hot griddle pan.
Mash the avocado with lemon juice and season with salt and pepper.
When toast is ready spread each of the slices with avocado top with mushrooms and spoon over any excess marinade.
