BREAD, BUTTER AND RUM PUDDING

Ingredients
1/2 loaf of fruit sourdough chopped up into 1cm cubes
5 prunes roughly chopped
60ml rum
1 cup caster sugar
1.5 cups cream
5 eggs
2 teaspoons vanilla extract
50g butter cut into cubes
Pinch salt
1/4 cup raw sugar
Method
Preheat the oven to 140 degrees Celsius.
Mix together fruit loaf, rum and prunes and leave to soak for 5 minutes.
To a bowl add caster sugar, cream, eggs and vanilla and stir well.
Pour custard mix over the bread and leave to soak for 10 minutes to allow the custard to soak into the bread.
Pour into a lined baking dish, place cubes of butter on top, add a pinch of salt and then top with raw sugar.
Bake for 40 minutes until the sugar on top is nice and crispy.
