ULTIMATE POTATO BAKE

Ingredients

4 large potatoes

50g butter

100g bacon diced

2 cloves garlic finely sliced

1 cup white wine

1 cup creme fraiche

2 spring onions sliced

Small bunch parsley chopped

Small bunch thyme chopped

 

Method

Preheat oven to 180 degrees Celsius.

Boil potatoes in a large pot of salted water for 5 minutes then turn heat off, remove potatoes from water and leave to cool.

Add butter, garlic and bacon to a frying pan and sauté for 5 minutes.

Add wine and simmer until liquid had reduced by half.

Add creme fraiche and stir through. Simmer for another 5-10 minutes until it has reduced by another 1/3.

Add spring onion, parsley and thyme to the pan and stir through.

cut the cooled potatoes into large chunks and place in a baking dish. Pour over the creamy sauce and bake for 30 minutes.
