CHICKEN STIR-FRY

Ingredients
2 carrots cut in a fine julienne
1 capsicum finely sliced
12 snow peas finely sliced
1 cup finely sliced celery
2 cloves garlic finely chopped
1 thumb sized knob of ginger finely diced
1/4 cup sweet chilli sauce
The white part of 1 lemongrass, quartered length ways and finely sliced
270g soba noodles
800g diced chicken breast
Method
Add garlic, ginger and lemongrass to a bowl with the sweet chilli sauce and stir.
Put a wok on very high heat and add some oil at the same time add noodles to a pot of boiling water and cook as per packet instructions.
Cook the chicken in the wok on high heat for approximately 5 minutes until cooked through. Then add 3/4 of the vegetables and all of the chilli sauce mix and stir fry on the highest heat you can. Add cooked noodles and remove from heat, add in the last of the uncooked veggies and stir through.
