THAI PASTA SALAD

Ingredients
Salad
150g Barilla Penne Pasta
1/2 Red onion finely sliced
1 carrot julienned
2 cups bean sprouts
1 red capsicum finely sliced
1 long red chilli finely sliced (removed seeds if you don't like it hot)
1/4 cup salted peanuts
1/2 cup coriander leaves
Dressing
1 tablespoon fish sauce
1 tablespoon soy sauce
1/4 teaspoon sesame oil
1 teaspoon finely diced ginger
1 cloves garlic finely diced
Juice of 1 lime
3 tablespoons olive oil
pinch salt
Method
Cook pasta ahead of time per packet instructions and allow to cool.
Mix all salad ingredients in a large bowl, add cooked pasta.
Mix together dressing ingredients in a small bowl and then just before you're ready to serve pour it over the pasta salad.
