BEAN NACHOS

Ingredients

Nachos

500g grated tasty cheese

1 bag original corn chips.

 

Bean base:

1 white onion finely diced

1 garlic clove thinly sliced

500g tomato passata

1 can Old El Paso black beans

1 can Old El Paso Refried beans

 

Mango salsa:

1 Mango deseeded and diced

1 Avocado diced

1/2 red onion finely diced

1/2 large Red Capsicum diced

1 x spring onion finely chopped

 

Method

Pre-heat oven to 180 degrees.

Add onion and garlic to a pot with some cooking oil and sauté for about 5 minutes. Add passata and cook for another 5 minutes, add a big pinch of salt. Add refried beans and black beans and stir through, cook for another 5 minutes.

To prepare nachos, spoon the bean mix into a baking dish. Assemble the corn chips on top and then sprinkle cheese. Put in oven and bake until golden on top (approx 10-15 mins).
