CHICKEN SKEWERS

Cook time: 15 minutes

Serves: 4

 

Ingredients

1 long Green Chili finely chopped

1 tablespoon Mustard Seeds

1 tablespoon Turmeric

2 cloves Garlic finely chopped

1/4 cup shredded Coconut

Juice of 1 Lemon

1/2 cup Miso

2 tablespoons olive oil

4 x chicken thighs

 

Use either wooden skewers that have been soaked in water overnight or metal skewers (metal preferred).

 

Method

Preheat oven to 180 degrees on the fan-grill setting. 

Mix all marinade ingredients together in a bowl. Add whole chicken thighs to the marinade and leave for at least 1 hour or overnight.

Using 2 skewers per thigh skewer chicken, folding it over as many times as you can.

Place on a baking tray and put in pre-heated oven. After 5 minute turn over and cook for another 5 minutes and repeat.
