GOATS CHEESE TART

INGREDIENTS
1 Granny Smith apple, cored and cut into 8 wedges
1 sheet puff pastry
4 tbsp leatherwood honey
Seeds of 1 vanilla pod
10 strawberries, hulled and halved
Juice of ½ lemon
150g mascarpone
40g Tamar Valley Truffles truffled chèvre (or any other goat’s cheese)
METHOD
Step 1
In a medium bowl, toss the apple wedges with the honey and vanilla seeds until well coated. Arrange the apples in a medium oven-safe pan, and use the same bowl to toss the strawberries, letting them absorb the leftover honey and vanilla. Tuck the strawberries into the spaces between the apples, then cover the fruit with a sheet of puff pastry, tucking in the edges.
Step 2
Place the pan over medium heat to gently cook the base of the apples, warming them just slightly. Once ready, transfer the pan to a preheated oven at 180°C and bake for 10-15 minutes, or until the puff pastry turns golden. While it bakes, add the mascarpone and chèvre to the same bowl and whisk until a smooth, thick cream forms.
Step 3
When the tart is golden and ready, remove it from the oven and serve warm with a dollop of the truffled chèvre cream. Garnish with a fan of sliced strawberries for a final touch.
