HONEY MUSTARD CHICKEN


PREP TIME 15 minutes
COOK TIME 20-30 minutes
SERVES 4

INGREDIENTS

4 chicken Marylands

100g speck, diced

1 chorizo, sliced into rounds

4 potatoes, roughly chopped

2 sprigs of thyme

2 tsp Tamar Valley Truffles mustard (or any other mustard)

300ml cream

1 tbsp honey

METHOD

Step 1 

Place the chicken Marylands in a large, cold pan, skin side down.

Turn the heat to high and cook until the skin is browned.

As the pan begins to sizzle, add the speck and chorizo. Cook until they release a good amount of fat.

Step 2

Once the chicken skin is browned and crispy, remove the chicken from the pan.

Add the potatoes to the pan and stir them around.

Place the chicken on top of the potatoes in the pan.

Transfer the pan to a preheated oven at 180°C and cook for 15-20 minutes, or until the chicken is cooked through and the potatoes are tender.

Step 3

Remove the chicken from the pan and set it aside to rest.

Add the mustard, honey, thyme, and cream to the pan with the potatoes, speck, and chorizo.

Stir over medium heat until the sauce is well combined and thickened.

Step 4

To serve, spoon some potatoes and sauce into a bowl.

Place a chicken Maryland on top and garnish with your favourite fresh herbs.
