HONEY MUSTARD CHICKEN BAKE

Ingredients
2 rashers of bacon cut into buttons
2tbs Thyme roughly chopped
2 tbs Seeded mustard
2 tbs honey
1/2 cup white wine
1/2 cup cream
1/2 cup water
2 chicken marylands
4 small potatoes cubed
Method:
Preheat oven to 180 degrees celsius
In a casserole pot on a stove over high heat add bacon and fry, then add chicken Marylands to brown the skin slightly
Then add thyme, mustard, honey and wine. Allow to simmer until the wine reduces by 1/4
Then add cream, water and potatoes
Put dish in oven and bake with no lid for 45 minutes
Remove from oven and test how liquid the sauce is. If it is still too watery then remove chicken and potatoes from disk and put over heat on the stove until the sauce reduces to desired consistency.
Place chicken and potatoes on serving plates and cover with sauce. Finish with some fresh parsley
