HONEY-ROASTED CARROTS


PREP TIME 15 minutes
COOK TIME 20-25 minutes
SERVES 1

INGREDIENTS

1 bunch rainbow carrots, trimmed and washed

2 tsp thyme leaves

2 tsp ground cumin

2cm knob of ginger, sliced

1 clove garlic, sliced

3 tbsp honey

2 tbsp white balsamic vinegar

2 tsp olive oil

METHOD

Step 1 

Preheat your oven to 190°C.

In a large sauté pan, combine the carrots, thyme leaves, ground cumin, sliced ginger, garlic, honey, olive oil, and white balsamic vinegar.

Place the pan over high heat and cook, stirring occasionally, until the sauce begins to caramelise.

Step 2

Transfer the caramelised carrots to a baking dish and place them in the oven. Roast for 20–30 minutes, or until the carrots are tender and golden.

Step 3

Once cooked, remove the carrots from the oven and serve. They work beautifully as an entrée or a side dish to complement your favourite protein.
