PUTTANESCA-STYLE SALMON TRAYBAKE

INGREDIENTS
2 salmon fillets
150g green beans
100g cherry tomatoes, halved
2 preserved lemons, minced
100g pitted olives, minced
½ cup garlic olive oil
2 anchovies, minced
½ tsp chilli flakes
1 tsp coriander seeds
1 tbsp tomato paste
4 spring onions
METHOD
Step 1
In a small frying pan, heat the garlic olive oil over medium heat.
Add the minced anchovies, olives, chilli flakes, coriander seeds, tomato paste, and preserved lemons.
Cook gently, stirring often, until the oil is infused with the flavours of the ingredients.
Step 2
Let the flavoured oil cool slightly for a couple of minutes.
Stir in the cherry tomatoes and green beans.
Preheat your oven to 190°C. Line a baking tray with baking paper.
Lay the spring onions across the base of the tray, then spoon over the tomato, green bean, and oil mixture, spreading it evenly.
Brush a little of the flavoured oil over the salmon fillets and place them on top of the vegetables.
Bake for 10–15 minutes, or until the salmon is cooked to your liking.
Step 3
Once the traybake is done, allow the salmon to rest for 2–3 minutes.
To serve, divide the vegetables between two plates as a base, and then place a salmon fillet on top of each.
