HONEY SNAP BISCUITS

Cook time: 15 minutes
Makes approx 20 biscuits
Ingredients
125g butter
3/4 c caster sugar
2 eggs
1.5 cups plain flour
1tsp vanilla
2tbs honey
Pre-heat oven to 160 degrees Celsius
cream butter and sugar
add eggs one at a time and mix
add honey and vanilla and mix
add flour and mix into a dough
turn dough out onto bench and knead for about 1 minute to a smooth dough
flatten dough on bench and cover with cling-film and put in fridge for 1 hour
Place dough between to sheets of baking paper and roll out so the dough is an even 1cm thick dust with a little flour
Use a cookie cutter and cut out biscuits and place on a greased baking tray
bake for approx 12-15 minutes until they are golden.
