MULLED WINE PEARS


PREP TIME: 15 minutes

COOK TIME: 30 minutes

SERVES: 2


INGREDIENTS

3 pears with stalks 


MULLED WINE

1 bottle, 750 ml red wine (shiraz or cabernet)

3 star anise

3 cloves

1 cinnamon quill (or 1 teaspoon cinnamon)

1 ½ tablespoons raw sugar

2 tablespoons Blue Hills honey


METHOD

Step 1

Peel the pears evenly leaving the stalk in place. Start at the top of the pear and peel to the base

Step 2

Add mulled wine ingredients to a saucepan heat slowly and stir to dissolve the sugar

Place the pears into the mulled wine. Add water if needed to ensure the pears are covered with the liquid

Slowly poach the pears until they are tender and the liquid is reduced by half

Remove the pears onto a plate

Step 3

Strain the mulled wine into a clean saucepan using a chux cloth in a sieve

Return the sieved mulled wine to the heat

Add the pears and spoon the wine over the pears, cooking for another 2 minutes

Remove the pears

Continue to cook and reduce the mulled wine until it is syrupy 

Step 4

To serve, place the pears onto a plate and spoon over the reduced syrup
