OYSTERS KILPATRICK

INGREDIENTS

1½ tbsp kecap manis 

1½ tbsp tomato ketchup 

1½ tbsp barbecue sauce 

1½ tbsp Worcestershire sauce 

1½ tbsp sweet chilli sauce 

¼ cup grated cheddar cheese 

½ cup diced bacon 

12 fresh oysters 

Lemon wedges, to serve 

METHOD

Step 1 

In a medium bowl, mix together the tomato ketchup, barbecue sauce, kecap manis, Worcestershire sauce, sweet chilli sauce, diced bacon, and grated cheddar. Stir well until all ingredients are combined and the bacon and cheese are coated in the sauce. 

Step 2 

Arrange the oysters on a hot barbecue grill (use the flat top for an even cook) and spoon the sauce mixture evenly across each oyster. Close the lid and cook for 5-8 minutes, until the bacon crisps, the cheese melts, and the sauce caramelises nicely over the oysters. 

Step 3 

To serve, place the oysters on a bed of rock salt and add lemon wedges on the side for a bright, fresh squeeze. Enjoy these smoky, savoury bites straight from the grill!
