ROASTED GRAPES AND RICOTTA ON TOAST
PREP TIME: 15 minutes
COOK TIME: 30 to 45 minutes
SERVES: 2
INGREDIENTS
1 cup dark grapes
2 tablespoons Blue Hills Honey
1 tablespoon muscovado sugar (or use brown sugar)
Sprig of rosemary (use leaves only)
1 tablespoon red wine vinegar
Pinch of salt
2 tablespoons walnuts
2 thick slices sourdough bread
1 knob of butter
¾ cup ricotta
METHOD
Step 1
Add the grapes to a glass baking dish
Drizzle honey over the grapes
Add the muscovado sugar, vinegar, rosemary and salt and stir
Turn oven on to 180 degrees Celsius and bake the grape mixture for 30 to 45 minutes, until the grapes have halved in size
After 15 minutes baking, add the walnuts and stir through. Put the dish back in the oven to continue cooking
When cooked, remove from the oven and allow to cool for around 10 minutes
Step 2
Toast sourdough slices in a griddle pan with a knob of butter until both sides are golden brown
Step 3
Place the toasted sourdough on a serving plate
Put a tablespoon of ricotta on each sourdough slice and spread to cover the slice
Spoon the grape and walnut mixture over the ricotta
Drizzle a spoonful of the juices over the top to serve
