RUM AND BANANA PANCAKES


PREP TIME: 10 minutes
COOK TIME: 15 minutes
SERVES: 3-4

INGREDIENTS

1 ½ cups self raising flour
½ cup white sugar
1 egg
25g Ashgrove butter, melted
1 tsp bicarb soda
1 tsp sea salt flakes
300ml buttermilk
1 banana, diced
2 bananas, sliced
½ cup brown sugar
25ml rum
25g Ashgrove butter

METHOD

Step 1
Add self raising flour, white sugar, bicarb soda and salt flakes to a bowl and mix together well.

Step 2
Once mixed together, add egg and melted butter to the bowl and slowly stir together as you gradually add the buttermilk.

Step 3
Once mixture is stirred, add in diced banana and mix together again.

Step 4
Place 2-3 large spoonfuls of mixture into a pan on medium heat and turn over until cooked.

For the caramel sauce:

Step 1
Add brown sugar into a pan and stir well before adding butter and a pinch of salt. Leave for approx 1-2 minutes.

Step 2
After approx 1-2 minutes, stir in sliced banana before removing from heat and leaving to sit for approx 1 minute.

Step 3
After approx 1 minute, plate pancakes up with a large drizzle of banana caramel sauce over the top.
