SPICY TUNA & MUSHROOM TARTARE

SERVES 4

INGREDIENTS

½ bunch baby celery, thinly sliced

2 black radishes, thinly sliced

100g oyster mushrooms, torn

1 tsp sesame oil

2 tsp fish sauce

1½ tsp mirin

1 tbsp oyster sauce

2 cloves garlic, thinly sliced

1 small knob ginger, thinly sliced

1 tbsp white balsamic

300g tuna steak, cut into 1cm cubes

3 egg yolks

METHOD

Step 1 

In a medium-sized bowl, combine the sesame oil, fish sauce, oyster sauce, mirin, ginger, garlic, and white balsamic to make the dressing.

Add the baby celery, oyster mushrooms, and half the black radishes to the dressing, mixing well to coat them.

Step 2

To plate, layer the undressed black radishes on the base of each plate.

Spoon the dressed mushroom and celery mixture over the radish slices.

Place the diced tuna on top, then add the egg yolks over the plates.

Garnish with a sprinkle of flaky salt.
