CRAYFISH WITH WALDORF SALAD
INGREDIENTS
1 crayfish
10 red grapes halved
1 celery stalk thinly sliced
2 apples thinly sliced
1/2 bunch garlic chives, choped
1/2 bunch watercress
1/2 cup walnuts slight crushed
1 tbsp basil pesto
1/2 cup aioli
2 tbsp dill, chopped
2 tbsp julienne cos lettuce
Juice of 1/2 a lemon to seve
Salt
Pepper
METHOD
Step 1
Poach crayfish in boiling water for 7 minutes and place in cold water. Once the crayfish is cooled down take the tail off and take the shell off of the tail. then slice the tail into 1 cm slices and put to the side.
Step 2
Mix together your aioli and pesto to make a basil aioli and put that in the bottom of a medium sized mixing bowl, add the apple, grapes, walnuts, and celery and toss together to make the salad.
Step 3
Toss together the watercress, cos lettuce, dill and garlic chives to make a herb salad. To serve put Waldorf salad on the base of the plate, place the crayfish on top and then put the herb salad on top. To finish drizzle with lemon juice and crack some salt and pepper.
